This is a Caol Ila from 2007, aged for 17 years and bottled by Signatory at cask strength. Caol Ila is an Islay single malt, made on the shore of Loch Indaal.
Peat smoke leads the nose, with wood smoke and a touch of iodine, then honey and vanilla from the oak. The palate is powerful but balanced, with citrus, spice and a fresh salty edge. The finish is long, with smoke returning and a little spicy warmth.
