Southern Star Paragon is a bottled-in-bond bourbon from Southern Distilling in North Carolina, bottled at 50% ABV (100 proof) in a 750ml bottle.
It is made to a wheated bourbon recipe, so wheat takes the place of rye in the mash.
The nose is sweet and floral. The palate is silky, with caramel running alongside ripe apple and dried apricot.
