Spirit of Hven Organic Aquavit (75cl, 40%)

Spirit of Hven Organic Aquavit is a Swedish aquavit made on the island of Hven. It starts with certified organic wheat vodka, which is aged for twelve months before being distilled in a copper pot with fresh organic lemon and orange peel, herbs, St. John's wort and a little local honey. The aquavit is then matured in virgin, air-dried white American oak and blended from thirds aged 2, 4 and 6 years. It takes a citrus-and-herb route rather than the usual heavy caraway character. On the nose and palate, citrus and fresh herbs lead into a soft core of fudge and vanilla, with a peppery, herbal edge and a hint of fresh-ground coffee. The aftertaste is long, with an oily, honeyed sweetness.
