A Blanc de Noirs sparkling wine from Cocchi, made mainly from Pinot Nero in the Alta Langa hills of Piedmont. It is produced by the traditional method with long bottle fermentation.
Long ageing on the lees gives refined aromas of yeast, bread crust, fresh white fruit such as apple and pear, and delicate floral notes. The palate is balanced and structured, with good acidity and a persistent finish.
It pairs with seafood dishes, white meats or fresh cheeses.
