Spumante Metodo Classico Brut IGT from Sburoun. It shows fine, continuous perlage and aromas of white flowers, green apple and a light yeasty note, without aromatic overlap. The fine, persistent bubbles give a soft tactile sensation on the palate, while the finish remains savoury with good persistence. Its slender character makes it versatile with seafood starters, shellfish, raw fish preparations, fresh cheeses, vegetables and light fried foods. Serve it fresh in tulip glasses. It also suits sparkling-based cocktails where a dry, fragrant component is wanted.
