St. George Aqua Perfecta Basil is an unaged eau de vie from St. George Spirits in Alameda, California, bottled without any oak contact at 40% ABV in a 75cl bottle.
Two kinds of fresh basil, Genovese and Thai, go straight into the copper pot still with an unaged California grape brandy base, rather than being added after distillation. Master distiller Lance Winters created it in 2007. The Genovese gives a buttery, green foundation, while the Thai adds a brighter, spicy lift.
The nose is bright anise and fresh-cut basil. The palate is warm and sweetly vegetal with a slight menthol coolness, and the finish is clean and lingering.
