Starward Octave Barrels is an Australian single malt from the Starward distillery in Port Melbourne, bottled at 48% ABV in a 700ml bottle. It was distilled in 2018 and bottled in 2021, and it is non-chill-filtered and of natural colour.
The whisky was matured entirely in 100-litre octave barrels that previously held Yalumba's The Octavius Shiraz. It is the first release from the Starward Projects experimental programme.
The nose offers raisin, ripe peach and caramel with toasty oak. The palate is full-bodied, with dark forest fruits, blueberry, strawberry, marshmallow and nutmeg over seasoned oak, and the finish is long, with cherry, cinnamon and toasted marshmallow.
