Stellum Black Bourbon (75cl, 54.6%)

Stellum Black is a cask-strength bourbon from Stellum Spirits, the in-house brand of Barrell Craft Spirits, bottled at 54.61% ABV with no age statement. It was released in December 2021 as a limited bottling. Older reserve barrels are layered into the brand's original blend through a multi-step process. The bourbon was distilled and aged in Indiana, Kentucky and Tennessee. The blend draws on three Indiana mash bills, two high-rye and one close to all corn, with older Kentucky and Tennessee barrels folded in. The high-rye whiskey is described as bringing spice and structure, the corn sweetness, and the older barrels oak depth, ending in a long, warming finish.
