Stellum Black Bourbon (54.6%)

Stellum Black Bourbon combines reserve barrels with the original Stellum Bourbon blend, bottled at 54.61% ABV. It is warm amber in appearance. On the nose there is flowery vanilla, orange creamsicle, caramel corn and mixed peppercorns, with bright cedar and smoldering oak emerging as it sits. The palate shows sweet, lightly charred orange, then leather and floral vanilla, with cardamom, cedar and a hint of spicy nuts leading to a sweet cinnamon close. The finish is long, with dark chocolate taffy, leather, tobacco and cedar, and a lasting prickle on the tongue. A few drops of water bring out more cinnamon and black pepper, and the cedar becomes more prominent.
