Stellum Bourbon is a high-proof American bourbon created by the team at Barrell Craft Spirits. It blends three Indiana mash bills, two high-rye and one nearly all-corn, with older barrels from Kentucky and Tennessee.
The nose opens with clove, allspice and creamy macadamia, moving to green apple, nectarine and toasted oak. Vanilla, marshmallow and cotton candy on the palate give way to black pepper, cayenne and cinnamon-baked apple. The finish of candied ginger and black pepper ends in honeyed sweetness.
