Stellum Bourbon Whiskey (75cl, 57.5%)

Stellum Bourbon is a straight bourbon from the Stellum line produced by Barrell Craft Spirits. It is bottled at cask strength, 57.49% ABV, in a 75cl bottle, and carries no age statement. The blend draws on three Indiana bourbon mash bills, two high in rye and one almost entirely corn, with older Kentucky and Tennessee barrels added. It is blended in Louisville, Kentucky, and won a gold medal at the 2021 San Francisco World Spirits Competition. The nose offers clove, allspice, creamy macadamia, light tobacco, honeysuckle and green apple. On the palate, vanilla and marshmallow sweetness gives way to black pepper, cayenne and baked apples with cinnamon. The finish is candied ginger and black pepper settling into syrupy honey.
