Stellum Cask Strength Bourbon Black

Stellum Bourbon Black is a cask strength bourbon from Stellum Spirits, an offshoot of Barrell Craft Spirits. It builds on the original Stellum Bourbon by adding carefully selected reserve barrels to the blend. The blend marries a high-rye Indiana mash bill (75% corn, 21% rye, 4% malted barley) with a low-rye one (about 60% corn, 36% rye, 4% malted barley), plus reserve stocks from Kentucky and Tennessee. The colour is warm amber. Notes include vanilla blossom, orange creamsicle, caramel corn and peppercorns on the nose, charred sweet orange, leather and cardamom on the palate, and a long finish of dark chocolate taffy, tobacco and cedar.
