Stellum Cask Strength Bourbon (57.5%)

Stellum Cask Strength Bourbon is an American bourbon bottled at 57.49% abv. It is built from three Indiana bourbon mash bills, two of them high in rye and the third almost entirely corn. Older barrels from Kentucky and Tennessee are folded in through a multi-step blending process. The nose opens with clove and allspice, creamy macadamia nuts and light tobacco, then honeysuckle, green apple and nectarine, finishing on toasted rye and oak. On the palate, vanilla, marshmallow and cotton candy give way to black pepper, cayenne and cinnamon baked apples, with tart underripe blackberry and apricot alongside.
