Suntory Hakushu 12 Year Peated is a Japanese single malt, bottled at 43% ABV in a 750ml bottle. It comes from Hakushu Distillery, set in the forested highlands of Yamanashi Prefecture in the Japanese Southern Alps and established in 1973.
Non-peated malts aged in American oak and sherry casks are blended with peated malt, then finished in American oak hogshead barrels. The aim is smoke beneath green, herbal freshness rather than dominant peat.
The nose offers woodsmoke, earthy peat, honey, orange peel, green apple and pine. The palate has quince, dried dates, honeyed almond, mint, basil and heather, with gentle smokiness. The finish is medium-long, with cinnamon, lemon zest and a trace of tobacco.
