Tequila Ocho Extra Añejo El Bajío is a 2019 single-estate tequila from Los Altos in Jalisco, Mexico, made at NOM 1474 from Tequilana Weber agave. The agave is cooked in stone and brick ovens, the juice is extracted with a roller mill, and fermentation takes place in open-air wooden tanks. It is distilled twice in copper pot stills and is additive free. The nose has roasted agave, dried fruit and a subtle spice note. The palate is velvety, with caramel, vanilla and oak. It can be sipped neat or over ice.
