The Applicant Pinot Noir is a Chilean red wine from the Casablanca Valley, made by Jorge Martinez, chief winemaker at Vina Frey Leon. The valley's cool Pacific winds and mist, with clay and sand soils, give grapes of intense aroma and freshness.
The must is cold macerated for 3 days at 8°C, then fermented for 8 days at 23°C. 75% of the wine is aged in steel tanks and 25% in oak for 3 months before bottling.
It is soft but intense, with berries, herbs, forest floor, dark chocolate and coffee beans. It suits starters, carpaccio, pasta and Asian dishes.
