The Cabinet Barrel Proof Blended Whiskey 2023 is a cask-strength blend of straight rye and straight bourbon whiskeys from Proof & Wood, in a 750ml bottle at 56.26% ABV. The whiskeys are aged between 5 and 9 years, and the blend is non-chill filtered.
The 2023 release uses rye distilled in Indiana between 2014 and 2017 from a 95% rye mash bill, together with bourbon distilled in 2016 and 2017 from two mash bills. It was aged, blended and bottled in Kentucky, drawing on roughly 20 hand-selected barrels.
The notes are rich caramel and vanilla at first, then rye spice of cinnamon, clove and mint. A long, warming finish brings dark chocolate and toasted oak.
