This is a 14 year old single malt from The Dalmore, bottled at 43.8% ABV. It starts in American white oak ex-Bourbon barrels, which bring soft vanilla, toffee and honey notes.
A proportion is then moved to rare Gonzalez Byass casks that previously held sweet Pedro Ximenez sherry. After about two years the separate parcels are reunited, under Master Whisky Maker and Blender Gregg Glass.
The nose is warm honey, dates, Seville orange zest, raisins and allspice. The palate brings figs, dates, toasted hazelnuts, roasted coffee and maple syrup, and the finish is dark fruits, liquorice, marmalade and deep cocoa.
