This is a 21 year old Highland single malt from Dalmore, bottled at 43.8% ABV.
It begins in American white oak ex-Bourbon barrels, which give soft vanilla and honey notes. The whisky then spends a decade in casks that previously held 30 year old Matusalem Oloroso Sherry, selected from the Gonzalez Byass bodega in Jerez de la Frontera.
The nose has Seville oranges, bitter chocolate, Colombian coffee and vanilla. The palate brings sweet liquorice, Black Forest fruits, roasted walnuts and thick marzipan. The finish carries peaches, ginseng, pear tarte tatin and Sanguinello blood oranges.
