This is a 21 year old single malt from The Dalmore, bottled at 43.8% ABV. It is first matured in American white oak ex-Bourbon barrels, which lay down soft vanilla and honey notes.
The whisky is then moved into rare casks that previously held 30-year-old Matusalem Oloroso sherry. This second maturation adds depth and a silky texture.
The nose is Seville oranges, bitter chocolate, Colombian coffee and vanilla. On the palate come sweet liquorice, Black Forest fruits, roasted walnuts and thick marzipan, and the finish brings peaches, ginseng, pear tarte tatin and blood orange.
