The Dalmore 25 Year Old is a Highland single malt bottled at 42% ABV, with 3,000 bottles produced. The spirit starts in American white oak ex-bourbon casks, then is divided between Palomino Fino sherry butts and first-fill bourbon casks.
The two parts are married in bourbon barrels and finished in Portuguese Tawny Port pipes.
The nose has exotic fruits, marzipan, vanilla pods, treacle toffee and fig cake. On the palate come orange peel, chocolate truffles, liquorice, damsons and sherry-soaked raisins. The finish brings demerara sugar, maple syrup, bitter chocolate and spiced gingerbread.
