The Dalmore Luminary No. 3 is a 17-year-old Highland single malt bottled at 49.2% ABV, non-chill-filtered and with no added colour. It closes the Luminary Series, a collaboration between The Dalmore and V&A Dundee, and pairs whisky maker Gregg Glass with architect Ben Dobbin of Foster + Partners.
After maturing in American white oak ex-bourbon casks, the whisky was finished in seven: vintage Calvados from 1989 and 1999, Matusalem and Apostoles sherry, and Bordeaux and Châteauneuf-du-Pape red-wine barriques. The 2025 edition numbers 20,000 bottles.
Baked red apple, honey and vanilla lead the nose, followed by butterscotch and dark cacao on the palate and dried apricot and brioche in the finish.
