This is a single cask GlenAllachie from a Pedro Ximénez sherry hogshead, cask 10451. It was distilled on 10 August 2015 and bottled in May 2026 after ten years in wood. Only 358 bottles were filled, at 63.4% ABV in a 70cl bottle.
Pedro Ximénez sherry is made from very ripe grapes, air-dried to concentrate their sugars, and is known for dark fruit, chocolate and baking spice character.
The nose is rich raisins, dried figs, dark berries, treacle, cocoa and warming oak spice. The palate brings dark fruit, caramelised sugar, chocolate and baking spice. The finish is long and warming, with dried fruit, cocoa, sweet spice and structured oak.
