The Hakushu 12 Year Old is a Japanese single malt from the Suntory Hakushu distillery in Yamanashi Prefecture, at the foot of a mountain. It is made with soft, mineral-rich water from the Japanese Southern Alps, fermented in wooden washbacks and distilled in direct-fired pot stills of various shapes. Maturation is in hogshead casks.
The nose combines apple, pear, flowers and citrus with a hint of campfire smoke. The palate shows sweet fruit, mineral notes, malt, wood and a little smoke. The finish is dry and malty, with fruit and a pinch of pepper.
