This is a 12-year-old single malt from The Irishman, made by the Walsh Whiskey Distillery Company in Carlow and triple distilled. It was matured entirely in first fill, flame-charred bourbon barrels, and each bottle is numbered by batch and non-chill filtered.
The nose is sweet and spicy, with vanilla, cinnamon, a touch of clove, apples, pears, charred wood and freshly cut hay. On the palate, vanilla is joined by black peppercorns before a fruity middle. The finish carries barley and oak, with creamy fudge and dark chocolate.
