The Irishman Founders Reserve is an Irish blended whiskey from Walsh Whiskey Distillery in County Carlow, bottled at 40% in a 750ml bottle. It contains no grain or column-still spirit.
It combines 70% single malt with 30% single pot still whiskey, both triple distilled in copper pot stills and matured in first-fill bourbon barrels. The mashbill is 100% barley, malted and unmalted.
Tasting notes describe ripe peach, baked apple and white pepper on the nose, then dried figs, cocoa and cinnamon on a soft, waxy palate. The finish is very long, with hay-like malt and warm baking spice.
