The Matsui Single Malt Sakura Cask is a Japanese single malt made at the Kurayoshi Distillery in Tottori, in the foothills of Mt. Daisen. It is distilled in copper pot stills from 100% malted barley, produced fully in-house, and bottled at 43% in a 70cl bottle without chill-filtration.
The whisky matures first in ex-bourbon barrels, then finishes in Sakura cherry wood casks, which add a delicate floral character.
The nose has strawberry, red apple, almond and fresh citrus over mineral earth and soft sawdust spice. The palate shows baking spice, cacao, vanilla and cherry blossom with gentle oak tannins, and the finish brings white pepper warmth and vanilla sponge cake.
