The Senator Barrel Proof is a straight rye whiskey in a 75cl bottle, made from a mash of 95% rye and 5% malted barley. The whiskey is aged for at least six years in new charred oak barrels.
Each batch is put together from ten to twenty selected barrels and bottled at barrel proof, at 56.05% ABV.
The palate is nutty, with toffee, orange peel, herbs and light tobacco. Chocolate and blackberry come through when a little water is added.
