P.X. I Love You is a single malt Irish whiskey in a 75cl bottle, from The Whistler, the independent bottling arm of Boann Distillery in County Meath. It starts as a sourced single malt matured in ex-bourbon casks.
The whiskey then spends a minimum of nine months in ex-solera Pedro Ximénez sherry casks, which come from a pyramid ageing system. It is bottled at 46% ABV.
The nose brings cranberries, dried fruit and a hint of margarita. The palate opens with Maraschino cherries, dried fruit, maple, toffee and raisin, then turns to drying oak, coffee, burnt toast, allspice and walnut skins.
