Thresh & Winnow Limited Release Single Cask Rye Sotol Cask Finished

This is a single cask Illinois rye from the Thresh & Winnow Limited Release series, brought to market by Chicago's Koval Distillery. Before bottling it was finished in a cask that previously held sotol, the spirit made from a desert plant in northern Mexico. The rye brings cracked black pepper, baking spice and toasted grain over caramel and dried orchard fruit. The sotol cask adds dry desert herbs, green earthiness and a faint mineral edge, and the finish is both savoury and sweet.
