Thresh & Winnow Sotol Rye (75cl, 50%)

Thresh & Winnow Sotol Rye is an American spirit made in Illinois that combines rye with Dasylirion, the desert succulent used in Mexican sotol. It comes in a 75cl bottle at 50% ABV. The brand takes its name from threshing and winnowing, two old methods of processing grain. Here the peppery rye is paired with the vegetal, mineral character of Dasylirion. The nose is green and herbaceous, with sage, wild grass, black pepper and toasted grain. On the palate rye spice sits with dried herbs and a touch of roasted agave sweetness, then a chalky mineral note. The finish is medium to long, drying to white pepper and dried oregano with a faint smokiness.
