Pillars of Creation 2026 is an Irish whiskey from Two Stacks, bottled at 58.5% in a 70cl bottle. Only 350 bottles were produced.
It combines single pot still spirit and malt whiskey in a 60/40 split, taken from single casks. The pot still element was matured under full Oloroso sherry cask influence at Blackwater Distillery in Co. Waterford, then blended with spirit from Lough Gill Distillery in Co. Sligo and married for a further eight weeks in a 500L Cream Sherry Butt.
The nose offers dried cherries, cola sweets and raisins, and the palate moves from pot still spice to caramelised apple and dates. The finish is medium to long.
Tasting Notes
Dried cherries, cola sweets and dark fruit, with polished oak, raisins and soft honeyed nuttiness
Rich pot still spice, caramelised apple, dates, ginger and leather; sweet and savoury in balance, with mineral freshness
Medium to long, with salted chocolate, tea leaf dryness, oak polish and a lasting deep sherry character
