The Humours of Whiskey is the first release in the Two Stacks Artist Collection, made with the Irish artist Jack Coulter. It was inspired by Coulter's synaesthesia, his ability to experience music as colour.
The blend combines a 1991 single malt from ex-Bourbon casks, a 2002 single grain from an ex-Passito di Pantelleria cask and a 2016 single pot still from an ex-Mandorla cask. It is bottled at 50% ABV, with 300 units produced.
The nose has ripe mango, pineapple and peach. The palate brings caramelised apple, vanilla fudge and apricot, and the finish carries baked orchard fruits and toasted oak.
Tasting Notes
Ripe mango, pineapple, peach, crisp apple, poached pear and blossom honey
Rich and mouth-coating, caramelised apple, vanilla fudge, apricot preserve, candied citrus and pot still spice
Long and warming, baked orchard fruits, toasted oak, gentle spice and tropical sweetness
