Ultramundo Mezcal Maguey Lamparillo (75cl, 47%)

Ultramundo Maguey Lamparillo is a joven agave spirit from Rancho Pelayo in Mapimí, Durango, in Mexico's Zona del Silencio. It is bottled at 47% abv in a 75cl bottle and is deliberately uncertified. It is distilled from wild Maguey Lamparillo (Agave asperrima), a desert agave that takes 15 to 20 years to mature. The piñas are roasted for four days in a volcanic-stone pit, milled by hand, fermented with wild yeasts in open-air oak vats and double distilled in a wood-fired antique copper still. The nose and palate are green, peppery and earthy, with roasted agave sweetness turning savoury and smoky, alongside stone fruit, baking spices, olives and incense over firm minerality. The finish is long, with clean smoke fading to dry earth.
