Velier Clairin Vieux Sajous 5 Year Old 2020 (70cl, 59.5%)

Vieux Sajous is a Haitian clairin made by Michel Sajous at the Chelo distillery in Saint-Michel-de-l'Attalaye, from Cristalline sugar cane. This 2020 distillation was aged for five years in 19 casks that previously held single malt whisky or rum, and bottled at 59.52% abv. The time in wood has added complexity while the fresh aromatic character of the cane remains. Velier asks that clairin in its range comes from local, non-hybrid cane grown organically without chemicals, harvested by hand and fermented naturally without industrial yeast for at least 120 hours, then distilled in specific stills and bottled in Haiti.
