Very Olde St. Nick Cask Strength Summer Rye is a straight rye whiskey in a 75cl bottle, made from hand-selected barrels of sourced rye. It is bottled uncut and unfiltered at barrel proof, at roughly 117 to 119 proof, which shifts from batch to batch. The barrels are dumped before the peak Kentucky summer heat, making this the seasonal counterpart to the brand's Harvest Rye. The brand was created in the mid-1980s for the Japanese export market, and its name plays on 'samurai'. It is now based at Preservation Distillery in Bardstown, Kentucky, where this rye is bottled. The nose brings sweet herbs, baking spice and bright mint. The palate is peppery rye with vanilla and honey, and the finish is long and warming.
