Whisky de France Aumance is a French whisky from the Balthazar distillery in the Allier. It is made from organic maize, several malted barleys and rye, and bottled at 45% ABV.
It is fermented for at least six days, twice distilled in Holstein bain-marie stills and aged only in selected ex-Sauternes casks. It is not chill-filtered.
The nose offers honey, sweets and cherry, then new oak, vanilla and almond. The palate is fresh, fruity and round, and the finish is lightly spiced and richer, with malty notes.
