WhistlePig PiggyBack is a six-year-old small batch straight bourbon, bottled at 100 proof (50%) in a 750ml bottle at WhistlePig Farm in Vermont. It is the bourbon side of Dave Pickerell's final project for the brand.
The mash bill is high in corn with a dash of rye, and the spirit is aged in Char #3 new American oak barrels. The pig mascot on the bottle wears a Stetson rather than the usual top hat, as a tribute to Pickerell, the late Master Distiller.
The tasting notes give vanilla, caramel, toasted oak and brown sugar on the nose, rich caramel, sweet corn, vanilla cream and roasted nuts on the palate, and a long, warming finish of caramel sweetness and oak spice.
