White Heather 21 Year Old is a blended Scotch whisky created by master blender Billy Walker for The GlenAllachie Distillers Company, bottled at 48% in a 700ml bottle. Only 2,000 bottles were released. The malt content is high, at 47%, with Highland, Speyside and Islay malts set over a grain base.
The blend spent 18 years in American oak and sherry casks, then three more years married in Pedro Ximénez and Oloroso puncheons and Appalachian virgin oak casks. It is bottled at natural colour and non-chill-filtered.
The nose is soft, with heather honey, butterscotch and peat reek over mature sherry sweetness. The palate is round and full-bodied, with orange peel and smoke, and the finish is long, warm and lightly tannic, ending dry from the virgin oak.
