Widow Jane Baby Jane Straight Bourbon (45.5%)

Baby Jane is a straight bourbon from Widow Jane, made from the distillery's own heirloom corn of the same name. The spirit was distilled in Red Hook, Brooklyn and in Kentucky, then hand-assembled in Brooklyn from only a few barrels at a time. It matured in new charred American oak, is non-chill filtered and is reduced to 45.5% (91 proof) with mineral water from the Rosendale mines of New York. The nose brings salty air, green grape, honeycomb and cream soda. The palate runs from strawberries and cream taffy and salted caramel to fresh fig, allspice and café au lait. The finish is long and varied, with peach compote, star anise, cut hay, horchata and milk chocolate.
