Wilderness Trail – Bottled In Bond Rye Whiskey (75cl, 50%)

This is a bottled-in-bond Kentucky rye from Wilderness Trail Distillery in Danville, bottled at 50% in a 750ml bottle. That means at least four years in a bonded warehouse, from a single distilling season. It is small batch, from 20 barrels or fewer, and not chill filtered. The mash bill is 56% rye, 33% corn and 11% malted barley, using Kentucky-grown heritage rye. It was made by a sweet-mash process with copper column stills and aged in new #4 char oak. The nose brings butterscotch, maple, mint and orange peel. On the palate come orange zest, brown sugar, clove, honey-lemon and rye bread, and the finish has black pepper, pumpernickel, barrel spice and lingering citrus.
