Wilderness Trail High Rye is a Bottled-in-Bond Kentucky straight bourbon from the distillery in Danville, bottled at 50% in a 750ml bottle.
The mashbill is 64% corn, 24% rye and 12% malted barley, and every batch is fermented by the sweet mash method, with fresh ingredients rather than backset from an earlier distillation. As a Bottled-in-Bond whiskey, it was made in a single distilling season by one distiller and aged for at least four years in a bonded warehouse.
The nose has cinnamon, nutmeg, toasted oak and dark stone fruit. The palate moves from brown sugar and vanilla to tobacco, red and black fruits and black pepper. The finish is long and rye-driven, with oaky sweetness and a peppery bite.
