Wilderness Trail Rye Bottled in Bond (75cl, 50%)

Wilderness Trail Rye is a bottled-in-bond Kentucky straight rye whiskey from Wilderness Trail Distillery in Danville, bottled at 100 proof (50% ABV) in a 75cl bottle. The mashbill is 56% rye, 33% corn and 11% malted barley, fermented as a sweet mash with fresh yeast rather than the sour mash method. The spirit goes into barrels at between 100 and 105 proof, the lowest rye entry proof in Kentucky, and the distillery uses its own Infusion Mashing Process. The nose has baking spices, toasted oak, dried plum, raisin and peppermint. The palate brings clove, white pepper, caraway rye bread, spearmint and dark chocolate. The finish is long, with florals, spearmint sweetness, oak tannin and a little chocolate bitterness.
