Wilderness Trail – Small Batch Bottled in Bond Bourbon

Wilderness Trail Small Batch is a Kentucky straight bourbon released as a bottled in bond expression. Each batch is made up of as many as 12 barrels, all filled with distillate from a single fermenter. The mash bill is 64 percent corn, 24 percent rye and 12 percent malted barley. The spirit came off the still at around 137 proof and went into toasted, number 4 char barrels at 110 proof. It was aged in two rickhouses: one on a mid to upper floor, the other in the centre of the warehouse. The bonded release lets drinkers compare it side by side with the distillery's wheated single barrel bourbon.
