Willett Pot Still Bourbon is a small batch wheated Kentucky bourbon from Willett Distillery in Bardstown, bottled at 47% in a 1.75 litre bottle. The mashbill is 65% corn, 20% wheat and 15% malted barley. The spirit is distilled twice, first in a column still and then in a copper pot still, and matures in new charred American oak, with each batch drawn from about 12 barrels. The bottle is a replica of the pot still itself.
The nose offers vanilla bean, caramelised sugar and lemon cake, with thyme and a little coconut. The palate is creamy and gently sweet, with crème brûlée, cinnamon and cedar. The finish is medium to long, with soft mint and baking spice.
