Don Zoilo is a 15 year old Pedro Ximénez sherry from Williams & Humbert, a sweet, deep wine built on dried fruit and a dense, almost syrupy texture that comes from long ageing. It is a dark, thick mahogany brown.
The nose is intense, with raisin, fig, coffee and molasses. The palate is dense, sweet and enveloping, ending in a very long, balsamic finish. It is made for sipping slowly after a meal, alongside chocolate desserts, dry pastries, ice cream or blue cheeses.
