Williams & Humbert Jalifa Solera Especial 30 Year Old Amontillado (50cl)

Jalifa Solera Especial is a 30 year old Amontillado sherry from Williams & Humbert, in a 50cl bottle. Amontillado is defined by partial development of flor, the veil of yeast that forms during the first stage of maturation in American oak butts. This sherry spends about 8 years in those casks before moving to the sixth criadera of the solera system, where it gains a further 22 years of ageing. It is amber in the glass with topaz glints. The nose brings hazelnuts, aromatic herbs and delicate snuff tobacco. The palate is dry and elegant, with well-balanced acidity, and the long finish returns to dried fruit.
