Pando Fino is a dry fino sherry from Williams & Humbert in Jerez, Spain. It is aged under a veil of yeast called flor, which protects the wine from oxidation and shapes its character.
The colour is a clear, bright pale straw. The nose is complex, with almond, yeast and a light touch of aromatic herbs, lifted by fresh acidity. On the palate it is very dry and lively, with a clean, persistent finish and a pleasantly bitter almond note. It is traditionally served very cold, at around 8°C, and suits being poured as an aperitif.
