Jalifa is an Amontillado from Williams & Humbert, aged for 30 years by the traditional solera method. Wine is moved between tiers of casks, which encourages controlled oxidation. It is an intense amber colour and comes in a 50cl bottle at 20.5% ABV.
The nose is complex, led by walnuts and wood with tobacco, vanilla and sweet spice such as cinnamon. The palate balances the saltiness typical of Amontillado against a residual sweetness, with a velvety texture. The long finish recalls dried fruit and caramel. Serve at about 14-15°C with foie gras or mature cheese, or after a meal.
