Wolfburn Aurora is an unpeated Highland single malt bottled at 46% ABV, non-chill-filtered and natural in colour, in a 75cl bottle. It takes its name from the aurora borealis seen in the Caithness sky. Wolfburn was revived at Thurso in 2013 on a site dating from 1821.
It is a vatting of three cask types: 40% second-fill ex-Islay quarter casks, 40% first-fill ex-bourbon barrels and 20% first-fill Oloroso sherry hogsheads. The mash ferments for 75 hours.
The nose is led by sherry, with raisin, orange peel and toasted oak over malt and vanilla. The palate is layered with dried fruit, honey, spice and gentle oak tannin. The finish is medium-long, with sherry warmth and malt sweetness.
